Would you use medium or low heat to make your demara syrup? btw. thanks for your great videos!

Hey Frederik! Either is really fine, medium would be quicker. If you keep stirring periodically it'll dissolve pretty fast. The main things is, it's best to not let it boil. It won't hurt the syrup, but it could reduce it some and throw off the balance. So glad you enjoy the videos! Cheers!

Hi I was wondering how do you know how long to stir for each cocktail? Does it differ for each different cocktail?

Hi Vivian! It does't differ by cocktail, though the size of the ice cubes can alter it a bit since they'll melt at different speeds. Typically I'll stir for about 20 seconds with common sized ice cubes. If you're using very small ice cubes they will melt faster, so only stir for 15. If the cubes are really big, say 1 inch on each side, do closer to 25-30 seconds. Hope this helps! Cheers.
