My Noilly Prat Dry Vermouth is starting to smell vinegary, although I did buy it February and it is May now. How long should I keep vermouth? I wouldn't dare make any drinks with it. Although maybe in cooking, I heard is a good alternative not to waste. Can't be too sure...

Hi Oliver! Yeah, that means it's starting to oxidize. Which isn't dangerous, just means it's not as fresh. Did you refrigerate it? Vermouth is freshest for about a month I'd say. But you can stretch it a little longer. Yes, vermouth is great in cooking! Use it the way you would wine or sherry vinegar. Also, adding a little sugar to dry vermouth makes it a great alternative to mirin, a key ingredients in some asian dishes. Hope this helps! Cheers.
