Tom, I've been making cocktails at home for several years and have found the tutorial here and the HowTo videos on YouTube to be incredibly helpful. The Port of Call is a favorite among my friends here in the city and I used it to impress my bartender friends in Berlin. Hi Tom, just a quick question, what would happen to these syrups, or even simple syrup, if they are left out for too long? Would it be like vermouth where it just loses flavor, or would it be dangerous to consume?

Hi Colin, are you talking about leaving them out at room temperature? These syrups should definitely all be refrigerated. If left out for a few days some could start to go bad, and probably shouldn't be used. Fruit syrups are the most susceptible, the spice/herb syrups less so. In the fridge syrup flavors may start to loose their luster after a month or so, but they'll still be usable. Vermouth is a little different being an alcohol product, but the rule with the fridge is the same. Cheers!
