So nice to hear a Southern accent again!!! I'm stuck up here in Yankee-land, and I miss it! I'm going to try your recipe with smoked ham hocks and the "greens trio" they have bagged at walmart; kind of hard to find collards by themselves here in Connecticut! I'll grow my own this spring!
