I'm speculating here, but sexual behavior is definitely driven by both psychology and physiology. I suspect, if we break it down, those who engage in excessive sexual behavior (or however sex addiction might be described) are doing so because the like the way they feel when they're doing it, rather than their body requiring that amount of sex to function properly, so it's psychological. Granted, orgasm causes relaxation, but there are other ways to relax equally well.
