Hi Jim H, sorry for very late reply!! The other trays are used as the first working tray fills, the next one is placed ontop and food scraps then added. The worms make their way up to the next level and in about a week the first working tray can be empyied and castings used in the garden. I've realised that it's best to not feed them for at least a week before second working tray is added on top, so then they are really hungry and move quickly up to next level.
