Hello, I have a question: I followed steps 1-5 and left my mixture to rest, but after 16 hours it is still a liquid. What mistake have I made?
Little Green Cheese
You may need to add a little more rennet (depending on the strength of it) at the start of the process. Add three more drops, and it should be fine. Also, make sure you are not using ultra-pasteurised or UHT milk. These two milks will not set a curd.

If you fold cheesecloth over several times, it works very well. I'm in the US, where we can only find ordinary muslin in fabric shops--nothing known as "butter muslin."

That will be fine. Even a clean tea towel will work.
