I am quite enjoying the approach to vegan gluten-free cooking used in these classes: understanding the role played by the ingredients rather than replacements of original ingredients. Cooking with knowledge!!!! That is how we should all cook no matter our eating style. Thank you!

Ingredients are given quite rapidly. It would be nice to go slower and talk about the ingredient as we take it down in our notes.
