I have made hot pepper jelly before, but I enjoyed watching the proper way to do it. Next week I will go to the Farmers Market and get the peppers. I like adding the red pepper to give it color.

if I do not have liquid pectin HOW MUCH CAN I USE DRY also can reduce the sugar? thanks

Irini: I am so sorry for the delay in answering your question. I have never tried to use dry so I do not know. Liquid is the only type I have used. Also I have not reduced the sugar. To maintain the body and 'gel' of this jelly it needs a high ratio of sugar. You are welcome to try to reduce the sugar or use a substitute but the results probably won't be the same. Good luck.
